Pad Thai (Vegan)

· 8oz Noodles

o (I use Thai Kitchen Brown Rice Noodles)

· 1 tbsp Sesame Oil

· 1 cup (or can) Bean Sprouts

· 1 can Water Chestnuts

· 1 can Chick Peas

· ¼ cup Green Onions

· ¼ cup Cilantro

· Pad Thai Sauce

o ½ cup Soy Sauce

o 1/8 cup Rice Vinegar

o 1/8 cup Sriracha

o 1tbsp Brown Sugar

o 1tbsp Lime Juice

· Cook noodles per instructions. Drain and toss them with 1 tbsp sesame oil. Add sprouts, chick peas, green onions, water chestnuts with the noodles and mix with pad thai sauce. Add cilantro and serve. J
